Perez got his name on the scoresheet against the Saints after 27 minutes, finishing expertly past Angus Gunn.
And he made it a quick-fire double by striking again just moments later to virtually assure Newcastle of the three points.
Perez has now scored nine goals in 34 Premier League appearances for Newcastle this season.
And his good form since the turn of the year has alerted supporters up and down the country.
“I’d have Perez at Everton, sign him up,” wrote one Toffees supporter on Twitter.
“Perez with another goal i [swear to god] if we don’t sign him this summer…” said an Arsenal fan.
A Tottenham supporter went direct to their club, quipping: “@SpursOfficial sign Ayoze Perez please.”
Having seen Perez tear his team up, a Southampton fan said: “We should buy perez.”
Perez’s brace made it five goals in his last six Premier League appearances for Newcastle.
The 25-year-old has also laid on an assist during that run, setting up a goal in the win over Everton.
Newcastle fans showered Perez, who played twice for Spain Under-21s, with praise after impressing against Southampton.
“Surely Perez should be called up by Spain. He’s been absolutely immense this season,” wrote one.
“Great half by the whole team. Perez has been outstanding in all aspects. I’d love to see him get a hat-trick,” said another.
A third added: “If Ayoze Perez’s goals keep us up, nobody deserves it more. Been with us through relegation and promotion, makes the most of his ability and has 10+ each of last three seasons.”
A Newcastle fan took aim at Perez’s critics, saying: “Remember when everyone hates Perez? Wrongly.”
